Quick and Easy Muffins for a Lazy Sunday
Hey -- with oats, bananas, canola oil, and very little sugar -- they might even be nutritious!
1 cup oats
1/3 cup milk
2 over-ripe bananas, mashed
1 cup flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 well-beaten egg
2 tablespoons salad oil
In mixing bowl, combine the oats and milk and let stand while you prepare the rest. Mash the bananas. Beat the egg. Combine flour, sugar, baking powder, and salt. Add the banana, oil, and egg to the oat and milk mixture, then add the dry mixture and stir until moistened (don't over-mix). Scoop into muffin baking cups and bake at 400 degrees for about 20 minutes (test with toothpick). Makes 12. Eat warm, because you won't be able to wait for them to cool, anyway. Enjoy!
