Party Recipes
Hi! Steve and I hosted "card night" tonight and we all enjoyed some great snacks and drinks -- so here are some recipes you can use for your next party:
#1. Beef & Bean dip for Nachos:
In a crock pot put: 1 can diced tomatoes, an 8-ounce jar of picante sauce, a can of refried beans, and a packet of burrito seasoning. Brown 2 pounds of ground beef, drain and add to crock pot. Dice 1/2 an onion and a small green pepper and saute with a tablespoon of minced garlic in 3-4 tablespoons of oil. When tender, add to crock pot. When hot, add enough water to make a nice dipping consistency (about half a can) then an 8-ounce package of shredded cheese (cheddar, Monterrey Jack, or colby). Let simmer on low for 1/2 an hour to an hour.
#2. Fresh Pico de Gallo:
Dice up 2 tomatoes, 1 cucumber, 1/4 of a medium-sized onion, 1/4 of a medium-sized green pepper, and a few sprigs of fresh cilantro. Season with salt, pepper, a tablespoon of olive oil, and the juice of 1/2 lime. Dice up a small jalapeno if you like yours a little hotter.
#3. White Sangria:
In a serving pitcher put: one 750 ml. bottle of dry white wine (chardonnay, sauvignon blanc, reisling, or other), a cup of pear nectar or natural pear juice, 2 ounces of Captain Jack's Spiced Rum, and a tablespoon of sugar. Slice up an orange and add to the mixture, refrigerate overnight. When ready to serve, take out orange slices (to eliminate bitterness from the rind), and top off each glass with an ounce or two of sparkling water and 3 or 4 ice cubes. Stir and enjoy! Yields 4 to 6 servings.
