Isn't it Romantic!
I don't think I'm the best person to write about Valentine's Day romance (unless it's about going somewhere!), because Steve and I spend all of our "gift money" on travel, but I'll go ahead and share my "romantic meal" plans with you in case you aren't going out Saturday night, either.
Our Florida trip - Celebrity Century cruise in January was really our New Year's/Steve's birthday/Valentine's Day spend-a-thon, so I'll be cooking up a nice dinner at home instead of going out.
First course, an appetizer of shrimp cocktail. Cooked shrimp is on sale at Kroger, so this is no-brainer.
Next, a (small) bowl of my famous minestrone soup -- it's a dead-ringer for Progreso's, so I recommend getting a can of that (which I may do anyway if I end up tight on time). The problem with making it from scratch is that we end up with a huge vat of it and either have to make a whole meal of it, or we have leftovers for days.
Third, a salad of mixed greens, tomato, cucumber, olives, and feta cheese, with a homemade dressing of olive oil, balsamic vinegar, and my special concoction of salt, pepper, garlic, onion, oregano, a squish of lemon, and a pinch of sugar.
Main course, Chicken Cacciatore with a side of penne pasta.
Dessert will be a compote of fresh berries and kiwi, all conveniently on sale at Kroger!
Of course I'll get out the good china, light a couple of tapers, and fish out a decent bottle of wine from the pantry.
