Easy Holiday Fudge Recipes
Christmas would be horribly boring without homemade treats -- so here are some of my favorites (and the fact that I can make them tells you how easy they are):
Foolproof Fudge:
3 cups of semisweet chocolate chips -- 1 and-a-half 12-ounce bags. You might as well buy 2 bags and double this recipe!
1 can (14 ounce) sweetened condensed milk. Go ahead and get 2 cans if you are going to double this.
Dash salt (or 2)
1 cup walnuts, optional
1 1/2 teaspoons vanilla extract
Line square or oblong pan with foil (extend foil over the edges).
In large microwave-safe bowl, place chocolate chips, sweetened condensed milk and salt. Microwave at high 1 minute; stir. Microwave an additional 15 to 30 seconds or just until chips are melted and mixture is smooth when stirred. Stir in nuts if desired and vanilla.
Immediately spread evenly in prepared pan. Refrigerate 2 hours or until firm. Use foil to lift fudge out of pan. Peel off foil and cut fudge into squares.
Makes 2 pounds of fudge.
This is a fun recipe to play with -- for variation I have made a batch with candied cherries and pecans, and another with candied pineapple and chopped macadamia nuts. Use your imagination for a unique creation!
Peanut Butter Fudge:
1 stick of butter
2 cups of brown sugar, packed
1/2 cup milk
1 cup peanut butter, chunky or smooth
1 teaspoon vanilla extract
3 cups powdered sugar, sifted after measuring
Line an 8x8 pan with foil extending over sides
Melt the butter in a medium saucepan over medium heat. Whisk in brown sugar and milk. Bring to a boil, still over medium heat, and allow to boil, stirring frequently for 2 minutes.
Remove from heat and stir in peanut butter and vanilla. Place powdered sugar in a large bowl and pour the peanut mixture over it. Beat until smooth. Pour into the prepared pan, chill until firm, cut into squares.
Makes 64 1-inch pieces.
